Origin
A single estate outside Modica, in southeastern Sicily, run by the Belfiore family since 1962. Roughly four hundred trees, harvested by hand each October.
How to use it
A finishing oil as much as a cooking one — good over roasted vegetables, torn bread, or stirred into the five-minute herb sauce.
Good to know
Unblended and unfiltered. Best used within a year of the harvest date on the label. Store away from direct light.
