Grassy and green up front, with a peppery catch at the back of the throat — that is the polyphenols, and it is a good sign. Use it to finish: over roasted vegetables, torn bread, soups, or stirred into the five-minute herb sauce.

Origin+
A single estate outside Modica, in southeastern Sicily, run by the Belfiore family since 1962. Roughly four hundred trees, harvested by hand each October. Meet Marco Belfiore.
Storage+
Unblended and unfiltered. Best used within a year of the harvest date on the label. Keep it somewhere cool and away from direct light — not next to the stove.

Genuinely peppery
I bought the 500ml to try and went straight back for the litre. You can taste the difference on plain bread — grassy, then a proper kick at the end.
